Name: Elizabeth Olsson
Age: 54
Hometown: Manchester
Occupation: Secretary
Favourite holiday destination: Italy – we have spent some beautiful breaks in the Italian lakes drinking wonderful red wine and enjoying the scenery.
When diagnosed: September 2006
Biggest diet challenge: Eating out is always difficult – I hate making a fuss or asking what I can eat
Food you miss most: I’ve got a real sweet tooth so ‘real’ cakes and biscuits were a big loss and, on a hot day, I do crave a cold lager
Food you can’t live without: Snack bars are a life saver. I can carry them in my bag so I know I’ll never go hungry.
My story: I’ve always suffered from bloating and a lack of energy but when I became seriously anaemic and ended up with pneumonia two years ago it became obvious that something was wrong. It took months to get a coeliac diagnosis and then a further six months before I saw a dietitian but I have been gluten-free for 18 months now. I still struggle with eating out but have finally go to grips with my diet and am feeling much better.
