Biggest diet challenge: Lunchtimes/snacks – it is quite hard not to just eat a sandwich/wrap or grab a cake or biscuit
Food you miss most: I used to love boiled eggs and soldiers...it’s not the same without the soldiers
Top Tip for other coeliacs: Don’t let it stop you doing anything you want to do. There is always an alternative, and it may even be tastier!
Favourite Trufree product: Trufree chocolate brownies are just as good as normal ones – always good for a chocolate fix. I also like corn pasta more than ordinary pasta.
Favourite holiday destination: Mexico – I travelled along the Yucantan peninsula for a few weeks, staying in huts on the beach with no electricity and showering outside. Bliss.
Food you can’t live without: Cheese. You can put it on pretty much anything and it always tastes better.
My story: I was diagnosed with IBS during University and was told to cut wheat out of my diet in a bid to stop the bloating and severe stomach cramps. I found this quite difficult at first - being a student and not being able to eat pizza and kebabs, but then found other things that I enjoyed, and actually lost a bit of weight.
I now just get on with it and don't let it take over, and I feel a lot healthier for it.
