As many of you may already know, this Thursday 3rd March is World Book Day! World Book Day was introduced to inspire children to have a TRUe admiration for books. Schools throughout the UK and Ireland celebrate in different ways whether it’s encouraging pupils to bring in their favourite novel or dressing up as their much-loved story character! TRUfree knows there’s nothing more satisfying than enjoying a gluten free
chocolate finger whilst flicking through a novel, which is why we’ve created this fun recipe for decorated
gluten free biscuits. Children can dunk a gluten free
digestive whilst diving into a Jacqueline Wilson paperback. If you know of a great children’s story book and you want to spread the word tweet us at www.twitter.com/Trufree.
This recipe uses cake decorations and icing, but don’t worry we’ve listed our TRUly favourite toppings which are gluten free and wheat free.

Glacé Icing
This icing recipe is sufficient to cover 20-24 small biscuits. If you wish to use the glacé icing for piping, reduce the amount of water to give a slightly thicker consistency.
Ingredients
125g icing sugar, sieved
3 –5 tsp water depending on consistency required
Method
1. Place the sieved icing sugar in a mixing bowl, add the water and any flavouring or colouring and beat until smooth and thick enough to thickly coat the back of a spoon.
2. If you find the mixture is too thin, add more sieved icing sugar. If it's too thick, add more water but a few drops at a time as a little liquid goes a long way.
3. Decorate with any of the toppings shown below or as noted in the Coeliac Handbook.
Recipe Variations
Coloured Glacé Icing Recipe
Add 2-3 drops of food colouring. Be very careful not to add too much.

Replace the water with fresh lemon juice or reduce the water slightly and add a few drops of lemon flavouring.
Chocolate Glacé Icing Recipe
Sift 2 tsp of cocoa powder in with the icing sugar before adding the water.
Coffee Glacé Icing Recipe

Vanilla Glacé Icing Recipe
Add a few drops of vanilla extract.
